PROVITA  EMULSIFYING  SALTS
Provita emulsifying salts are made of citrat and/or phosphates, used in the manufacture of processed cheese
The function of emulsifying salts;
It transforms the principal milk protein, called casein, into e homogeny paracasein solution and increases the use of protein.
It peptizes the casein which is found in the cheese in a heterogen form.
By regulating pH, it gives stability to the product and longers the self life.
It gives characteristics to the end product like sliceable, softness, and hardness.
Blocking the bacteriologic development, enables healthy products with long shelf lives.
Shortens the process time.
Enables fat emulsification.
Changes the appearance of the product and increases its taste.

PROVITA 366
Provita 366 is a pH regulating (basic) salt using in the manufacture of processed cheese and has a strong buffer effect.   
When pH value is needed to be regulated, it is used with other Provite emulsifying salts.
Optimum phosphate content gives Provita 366 its characteristics.
PROVITA  FC0
Provita FC 0 is the emulsifying salt which is used in processed cheese without giving a creamy effect.
Thanks to its excellent citrate and phosphate combination, the function of Provita FC 0 is to resolve the casein and providing taste stabilization.
This emulsifying salt is used in the manufacture of processed cheese, block cheese and sliceable cheese.
PROVITA  FC 14
Provita FC 14 is the emulsifying salt which is used in processed cheese without giving a creamy effect.
The function of Provita FC 14 is to resolve the casein with its citrate and phosphate content.
It is used in the manufacture of processed cheese (Block, pizza cheese etc.) with high re-melting ability.
PROVİTA  E
Provita E is used in the manufacture of processed cheese and has a strong ability to give a creamy effect to the product
The function of Provita E is to resolve the casein with its different phosphate content.
This emulsifying salt is used in the manufacture of fatty block cheese and sliceable cheese.
PROVİTA  359
Provita 359 is a emulsifying salt with a high creamy effect. 
Provite 359 is improved for the manufacture of processed cream cheese.
Its specialty comes from the most appropriate blend of different poliphosphates    
PROVITA  F 90
Provita F 90 is a emulsifying salt with a high creamy effect. 
Provite F 90 is improved for the manufacture of processed cream cheese.
